Jamaican Me Vegan Bowl

This is a super healthy and delicious meal for all you healthy vegans out there!  I love the combination of flavors highlighted from cooking all the ingredients in coconut oil and topping off with a little bit of spice!

What you will need..
  • 2 Very ripe plantains – The riper the better
  • Coconut oil
  • 1 can of black beans
  • Jalapeño pepper
  • Red onion
  • Rice
  • Avocado
  • Kale
  • Lemon
  • Red Chili flakes
  • Garlic

Cook your favorite rice. Once fully cooked, mix in fresh minced garlic

Cook can of black beans. Add 1 tablespoon of coconut oil. This will make them creamier

Put about 1 inch worth of coconut oil in a deep pan. Cut plantains down the lengthwise middle, then into quarters. When coconut oil is hot, add plantains. Cook for 5 minutes on one side, then flip. They should be a deep golden brown on each side.  *Side note, keep the temperature on medium so you do not burn the plantains, rookie mistake.  Keep the sizzle an even level so they turn golden brown rather than charcoal black 🙂

Sautee kale in a pan, with coconut oil, lemon, and red chili flakes

Finely dice red onion and Jalapeños. Cube up 1 whole avocado.

Put together as follows:
  • Garlic Rice in Bottom of bowl
  • Add black beans
  • Add sautéed Kale
  • Add Plantains
  • Top with red onion and Jalapeños and avocado~
